Vegan Keto Peanut Butter and Berry Fat Bombs

Why do people eat fat bombs on keto?

When I started following the keto diet I had a hard time fitting in all the fat necessary.  The ketogenic diet ideally is around 70% fat.  It can be difficult to eat that much fat so keto fat bombs make an easy snack to boost your fat intake.  I follow the ketogenic diet to help manage my bipolar disorder so I am not as obssessive with my macros as some people are.  Generally I stay in ketosis without a lot work.  But I love having little snacks on hand. It makes it easier and helps with the carb cravings.

Can you eat vegan and do keto?

Of course.   I am not a vegan so but there are so many health benefits from eating a plant based diet that I am trying to incorporate more vegan meals and snacks into my lifestyle.  I have a few good friends that have recently gone vegan. I am in love with their food pictures and wanted to start making some vegan food of my own.  I have eaten vegan before. In fact, I was a vegetarian for ten years of my life.  I love the lifestyle and the food, so I am trying to eat more plant based meals.  I hope to start including more vegan keto recipes on my blog.

This is my first ever vegan fat bomb. I thought it turned out really good! They are a nice little treat for when you need a sweet snack.  I hope you enjoy it!

Vegan Keto Peanut Butter and Berry Fat Bombs Recipe

Nutrition info: 

24 servings

  • 55 calories
  • 1.1 g net carbs
  • 5.1 g fat
  • 0.8 g protein per serving

Ingredients:

Peanut butter bottom:

  • 1/4 cup peanut butter
  • 1/4 cup sugar-free coconut milk
  • 2 tbsp of coconut oil
  • 1/4 cup stevia

Mix peanut butter bottom ingredients in a food processor.  Then spoon about 1 tsp of the peanut butter mixture into a mini muffin pan (24 servings).  You can spray the pan with cooking spray but it is not really necessary. Put this in the freezer while you prepare the berry mixture.

Berry top:

  • 1/3 cup mixed berries (frozen)
  • 3/4 cup sugar free coconut milk yogurt
  • 1/4 cup shelled sunflower seeds
  • 3 tbsp of coconut oil
  • 1 tsp of vanilla extract
  • 1/2 cup stevia

Mix berry ingredients in food processor.  The sunflower seeds add a nice texture to go with the sweet berries.  Spoon around 1 tbsp of berry mixture into each cup.  It’s a little shy of 1 tbsp per cup so you may need respoon the berry mixture if you overfill.  Then pop it all in the freezer till it sets.

A little tip I got from a friend. If you have a gas stove heat your muffin tin for just a few seconds before popping them out.  Or you can let your tin set for a few minutes to losen things up.  Once you pop out your fat bombs store them in the freezer immediately.  They melt fairly quickly but they are soooo yummy!  I am going to make some more!
