Avocado Keto Pancakes

I love to use avocados in my baking because it’s a great way to add healthy fats. These are actually pretty easy. I like to serve them with greek yogurt and fresh berries on top. I usually sprinkle a little cinnamon and drip a teaspoon of sugar-free syrup on top.  It’s totally yummy!

Avocado keto pancakes ingredients

2 small avocados (about 1 cup)
4 eggs
1/4 cup almond milk
2 tsps vanilla extract
1/4 cup stevia
2 cups almond flour

If the avocados are ripe you can just smash them with a fork, but I usually use a  food processor and puree them.  Mix all your ingredients with a hand mixer. Fry them in butter on medium heat until they start to bubble. Then flip and cook until golden brown.

One drawback to using avocados is they don’t reheat as well as other pancakes. These taste best when freshly prepared.
